Breakfast Casserole

This casserole has become de rigueur at any breakfast function held in our office. Thanks to Annelise and Sharon for the original recipe. I've added a couple of tweaks to it. It's easy and always a hit.

Breakfast Casserole

About 8 slices white bread, crusts removed
1/4 C. melted butter
6 large eggs
1 pint half & half
2 C. shredded cheese (I use a combo of Cheddar and Swiss)
1 lb sausage (maple flavored is especially good in this)
1 tsp dry mustard
1 tsp salt
1/2 tsp pepper

  1. Spray a 9x13 pan with non stick cooking spray.
  2. Line with buttered bread slices.
  3. Brush melted butter on the bread.
  4. Brown the sausage and sprinkle over the bread.
  5. Combine the eggs, salt, pepper, mustard and half & half and pour over the sausage.
  6. Top the whole thing with cheese.
  7. Cover with foil and refrigerate overnight.
  8. Bake in a 350 over for 45 minutes to an hour.
